All classes will be taught in the state-of-the-art Anheuser-Busch Beer & Wine Lab at the Rosen campus, 9907 Universal Blvd., Orlando. Participants must be 21 and maximum seating is 50. Each class costs $25 and 100 percent of proceeds benefit United Way.

UCF’s United Way campaign kicks off in October and the university goal is $150,000 to benefit charitable agencies and programs in Central Florida.

The schedule of events includes:

“Classic Red Wines of France” with Dr. Frank Juge

October 2, 2015 – 6 p.m.

France is the source of many classic red wines, from the dark, spicy Syrah wines of the warm Rhone Valley, to the elegant Pinot Noir of Burgundy. For contrast we will also explore the Cabernet-Merlot Blends of Bordeaux and for a refreshing lift we will taste the fruity Gamay wine of Beaujolais. Exploration of the Terroir, history and culture of these regions will provide a context to help us understand and enjoy these classics.

In 1975, Dr. Juge taught the first course at UCF featuring the chemistry of wine and winemaking. A certified Advanced Level Sommelier, he has also grown a grape arbor and made wine as a hobby. In 2003, he joined the Rosen College faculty as a Professor of Hospitality Management. Dr. Juge holds a Ph.D. and a Bachelor of Science in Physical Organic Chemistry and joined the UCF Chemistry Department in 1968. He is one of three charter faculty still at UCF. He currently teaches Exploring Wines of the World and The History and Culture of Wine at the Rosen College. He is an active member of the Society of Wine Educators and a regular speaker at UCF events for the Burnett Honors College and LIFE at UCF, and educational program for seniors at UCF.

“Reds of Spain” with David Black

October 9, 2015 – 6 p.m.

With its warm and dry climate Spain is red wine country par excellence. Almost all of the best wines are made to the north of Madrid across the country from the Mediterranean in the East to the Atlantic in the West. The Tempranillo and Garnacha grape types are the major components of the brilliant reds from such classic wine regions as the Rioja, the Ribera del Duero and Toro which borders Portugal. The seminar will focus on these three regions but will also include some reds from areas such as Jumilla in the South, and Calatayud and the Priorat east of the Rioja.

Dr. David Black has served as an instructor and lecturer at the UCF Rosen College of Hospitality Management since 2009. Black has more than 30 years of experience in fine wine and spirits, including an intensive, five-year Master of Wine Program, studying viticulture, winery techniques, business, blind tasting and evaluation. He has also traveled extensively to major wine regions in France, Italy, Germany, Spain and California.

“Spooky Cocktails and Scary Treats” with Marissa Orlowski and Dr. Cynthia Mejia

October 30, 2015 – 6 p.m.

Planning a frightful Halloween bash? Join our “BOO-zy” class and learn how to pair spooky cocktails and scary treats. It’s like trick-or-treating…for grown-ups!

Our instructor, Marissa Orlowski, has a background in spirits and creating cocktails that makes her an ideal instructor for this class. She’s been a bar manager with Bennigan’s and The Cheesecake Factory before joining the Walt Disney World Company as a catering manager. While at Disney, she helped develop and rollout the global beverage standards used at the company’s resorts and theme parks. Our food pairings have been selected and created by Rosen College Assistant Professor, Dr. Cynthia Mejia. She has more than 25 years of experience in the hospitality industry working as an Executive Chef, Director of F&B, General Manager and Assistant Hotel GM in four and five star properties. Dr. Mejia also has international experience, opening the BLU Restaurant and Jazz Club at the Shangri-La Hotel in Singapore in 1999.

Hospitality Industry & Supporters Provide More Than $280,000 in Student Scholarships /news/hospitality-industry-supporters-provide-rosen-college-student-scholarships/ Thu, 19 Mar 2015 14:59:57 +0000 /news/?p=65036 On Thursday, March 19, 76 Rosen College undergraduate and graduate students received a total of more than $280,000 in scholarships during a special ceremony. The majority of those students received more than one scholarship.

More than 20 sponsors from the hospitality industry recognized outstanding Rosen College students based on criteria including, but not limited to: academic performance, industry experience, passion for hospitality, professionalism and service, and philanthropy.

Graduate student Marissa Orlowski was named the first recipient of the Etta Jean and Frank Juge Graduate Fellowship Endowment, which was created to provide awards to full-time doctoral students enrolled in the Rosen College. The fellowship is merit-based and awarded based on scholarly contributions in both research activities and the classroom. Marissa is a third year doctoral candidate and graduate teaching associate in the Foodservice & Lodging Management Department. Her research focuses on teams and team development in the food & beverage context, and she currently teaches Beverage Management and Fine Spirits.

Dr. Frank Juge and his wife Etta Jean have established the Etta Jean and Frank Juge Graduate Fellowship Endowment at UCF’s Rosen College of Hospitality Management to support education-related expenses for full-time doctoral students studying hospitality management. Their gift of $26,000 includes $25,000 for the endowment and an additional $1,000 to begin offering the Fellowship in 2015.

“We are excited that we are able to provide support for UCF students, especially Rosen College graduate students,” said Dr. Juge. “The bottom line for both of us is that we get great satisfaction in supporting UCF students to achieve their goals. This gift is a way of repaying UCF and those who supported us in our early years.”

Dr. and Mrs. Juge have a long history at UCF. He joined the Chemistry Department as a Florida Technological şŁ˝ÇÖ±˛Ą (now şŁ˝ÇÖ±˛Ą) charter faculty member in 1968. Etta Jean also joined FTU that year as charter staff, becoming the first secretary in the Chemistry Department, which is how they originally met. She rose to become the administrative assistant to the provost and vice president for Academic Affairs, then moved to Computer Services where she provided UCF faculty and staff training in technical areas like email and word processing. She received a degree in Liberal Studies and left the university to work as a technical writer, but remained strongly connected as a regular contributor to various UCF scholarships. Twelve years ago, she reunited with Dr. Juge and they married. Today, Mrs. Juge is a member of the Women’s Club at UCF and contributes regularly to their undergraduate and graduate scholarships as well as WUCF television.

Dr. Juge holds a Ph.D. in physical organic chemistry and has worked in many positions at UCF, including professor, dean of Graduate Studies, associate vice president, vice provost and acting provost. ln 1975, Dr. Juge taught UCF’s first course on the chemistry of wine and winemaking. He transferred to Rosen College in 2003, where he currently teaches Exploring Wines of the World and The History and Culture of Wine. In addition, he has guided UCF students on tours of famous wine regions around the world. He is also a certified advanced level sommelier and has made wine as a hobby. In 2012, Dr. Juge was recognized by Orlando Magazine with a Lifetime Achievement Award and inducted into their Dining Hall of Fame.

In the spirit of the couple’s affinity for wine, Mrs. Juge donated a set of wine-related photos for display in Rosen College’s Anheuser-Busch Beer & Wine Lab when the campus opened in 2004. An additional set hangs in the Partnership II building located in the Central Florida Research Park.

The Juges’ generosity and contributions are evident across the university and their endowment will enable graduate students to positively impact the field of hospitality management for decades to come.

All the classes will be taught in the state-of-the-art Anheuser-Busch Beer & Wine Lab at the Rosen campus, 9907 Universal Blvd., Orlando. Participants must be 21 and maximum seating is 50. Each class costs $20.

UCF’s United Way campaign is kicking off this week. The university goal for October is $150,000 to benefit charitable agencies and programs in Central Florida.

The Rosen classes are:

  • The History of Civilization in a Six Pack, 6-7:30 p.m. Friday, Oct. 4. Instructor Ed Measom, an adjunct at Rosen, founded the Professional Beer School and is a member of the American Homebrewers Association, Florida Brewers Guild and the Central Florida Home Brewers. He’s an award-winning brewer and competes in several brewing competitions each year. He has a chemical engineering degree from the şŁ˝ÇÖ±˛Ą of Connecticut and an MBA from Rollins College.
  • A comparison of French and American wines, 6-7:30 p.m. Friday, Oct. 11. Participants will learn about and taste reds and whites. Instructor of the class, Dr. Frank Juge, taught the first UCF course about the chemistry of wine and winemaking in 1975. A certified advanced-level sommelier, he has also grown a grape arbor and made wine as a hobby. In 2003, he joined the Rosen College faculty as a professor of hospitality management.
  • Food and Beer Pairing, 4-5:30 p.m. Oct. 13. This class will give advice on how to pick the right beer to go with meals. The class also will be taught by Measom, an adjunct at Rosen.
  • Introduction to the World of Wines, 6-7:30 p.m. Oct. 25. Dr. David Black will talk about the basic grape types and the wines they make. Black has more than 30 years of experience in fine wine and spirits, including a five-year Master of Wine Program, studying viticulture, winery techniques, business, blind tasting and evaluation. That is why McNamara, who serves as the director of fine wine for Premier Beverage Company, recently visited the Rosen College of Hospitality Management at the şŁ˝ÇÖ±˛Ą to lend his expertise to the industry’s future leaders.

    McNamara, who is just one of 186 Master Sommeliers in the world, spoke to 49 UCF Rosen College students in Dr. Frank Juge’s Exploring Wines of the World course.

    “Wine is an essential part of any hotel, restaurant, or resort operation, and it continues to weave its way in to all aspects of our culture, just as it has been in Europe for thousands of years,” said McNamara. “Wine has become much more mainstream, and for those of us in the hospitality industry, we need to continue to learn as much as we can about the wines of the world.”

    McNamara, who was named one of the “Best New Sommeliers of 2008” by Wine and Spirits magazine, lectured to students about the culture and intricacies of French red wines.

    “I hope that students took away the depth and breadth of Burgundy and the Rhone Valley,” said McNamara. “They are both areas that produce wines that require serious thought in order to really figure out what’s going on in the glass.”

    According to Juge, UCF Rosen College students need a comprehensive understanding of wines and food pairings in order to become effective managers of fine dining establishments.

    “Approximately one third of the profit from restaurants comes from wine sales; so if you plan on being successful in fine dining, it is essential to have an appreciation of the product,” said Juge. “Andy [McNamara] is one of the brightest guys in the business, and my students were thrilled to learn from him. We are very fortunate to have him and Premier Beverage Company as supporters of fine wine education at our college.

    McNamara provides wine education and training for Premier Beverage Company throughout the State of Florida.

    “Teaching is one of my favorite things to do; you never know when something you say might light a spark in a student and lead them down a fulfilling and interesting career path,” said McNamara.

Premier Beverage Company, one of Florida’s largest fine wine wholesale distributers, recently donated 1,860 bottles of product to allow the college to offer more fine wine courses to accommodate its increasing student body.

    Premier Beverage Company and UCF’s Rosen College partnered in 2011 to allow up to 450 students a year to take courses that focused on the historical, geographical and technical components of fine wines. The substantial 67 percent increased contribution from Premier Beverage Company now allows the college to support more than 750 students throughout the academic year.

    “In looking over the wine list, I am very impressed with not only the quantity, but also the quality and breadth of product that Premier Beverage has generously donated to our program,” said Dr. Frank Juge, a UCF Rosen College professor. “It reflects their continued support of our college and curriculum, as well as their commitment to educating the future hospitality leaders of the world in fine wines.”

    Cheers!     To kick off the partnership, Dr. Frank Juge invited Premier Beverage executives to the Rosen Campus during the summer 2011 semester.  Vice President, Eric Pfeil and State Director of Education, Al Beck, met with Dr. Juge, Dean Abraham Pizam, Dr. Joe Hutchinson, Professor Bob Ashley, Lori Cosmides and Jackie Toops in The Courtyard Café.  Following the meet and greet, the Premier guests spoke with students in Dr. Juge’s History & Culture of Wine and Exploring Wines of the World classes.
